I could go the conventional way and say a Bob Dillon song like Knockin on Heavens Door, or All Along the Watchtower, but I will say Simple Man. It's hard to narrow it down, but I'll try. RHCP's cover of Stevie Wonders' "Higher ground" is great. But my favorite would have to be SRV's cover of "Little Wing" by Jimi Hendrix. I read that they recorded that version on the last effort after an all night recording session where the smoking and singing had shredded John's vocal chords. I am not a fan of the Beatles songs being covered, but I admit this was an excellent cover which first appeared in the movie Sgt. Pepper's Lonely Hearts Club Band. It was a novelty record of sorts. My sister read Tiger Beat and 16 back in the mid 60's. One of those mags had a contest..Guess who the mystery band was.
