A real haggis is out of the question , unfortunately , due to gov't regulations and the fact it would have to still be overnighted here at huge cost ( and slipped by Customs ) , so this will have to do . Kevin Posted March 31, 2009 Report Share Posted March 31, 2009 Well , traditionally it's ground lamb ( sometimes beef or venison ) organ meat usually a combination of heart ,liver and lung mixed with oats and spices . It is simply cooked in a sheep's stomach to retain moisture , but that is not eaten . The stomach acts as a sausage casing. When cooked , you slit open the casing and scoop out the mince.
