Questions About a Recipe

I just looked at the recipe for the Philly Cheesesteak, from Pat's King Of Steaks, and I'd like to have something explained.

1. If you make a cheesesteak with American or Provolone cheese slices, how many slices do you put on?

2. One of the ingredients listed is 1 large Spanish Onion. Is the onion a requirement? Or is it actually an optional topping?

3. Would the recipe for a Philly Steak be the same as the one for a Philly Cheesesteak?

4. For the recipes with the cheese slices, do you put them on while the steak is cooking? Or do you put them on when you put the steak into the roll?

5. What are the most common seasonings and toppings for Philly Steaks and Cheesesteaks?

6. Would I be able to find freshly made Philly Steaks and Cheesesteaks in Allentown? Or would I have to take a trip to Philadelphia?

Sorry. I have only been back east twice, and both times were in Boston. I will be doing some traveling next year, though. South Carolina in March, Connecticut in August and Miami in November(leaving from Miami on a cruise to the Dominican Republic, British and American Virgin Islands.) I am excited about the cruise and I think it is going to be a long 14 months of waiting. Also, if I get a position I am interviewing for, I will have to go to Texas for 10 weeks for training. I have mixed feelings about that.

Annabelle....The amount of cheese depends upon your taste...however, one layer of either American or provolone covering the entire steak is the norm. Either that or a generous shmear of Cheese-Whiz. The cheese is added just as the steak if finishing frying so that it melts just a bit.

Onion too is of course depending upon personal tastes. I love the Spanish onion cooked til carmelization. Many people say "hold the onion". Some prefer raw onion.

As for the recipes you mention, I'd have to see them to know if they refer to the same thing.

The most common seasonings and toppings for Philly Cheese Steaks are:

Salt and pepper

*Onions, mushrooms, hot cherry peppers and cheese.

Ketchup or sometimes steak sauce (rarely).

A side of french fries is standard practice.

Then there's the Philly steak sandwich created by yours truly at pat's King Of Steaks in the early 60's. It's the Steak-Roll. You take a plain Philly steak sandwich (no toppings) and add a vertically sliced egg roll as your topping. Season with salt, black pepper and hot pepper to taste.

Finally, a good Philly Cheese Steak in Allentown?

Sorry Honey, but no. I've never found one outside of South Philly...not even North, Northeast or West Philly.

And BTW, neither Pat's nor Geno's make the best Philly Cheese Steaks. There are several shops that are far superior. I recommend that you try Jim's near 6th And South Sts.

What I meant to say was, isn't a Philly Steak like a Cheesesteak, except without cheese?

Are you sure Pat's isn't one of the best makers of cheesesteaks? I've read they originally made the Philly Steak, back in 1930. That was so long ago, even my grandparents weren't born then. Have you heard of the company known as, "A Taste Of Philadelphia"? I wonder if they've got cheesesteaks?

just a random note:

I never knew what a "Cheese Steak" was, and always thought that it's a Steak with a Slice of Cheese on top... or something similar

but now, after seeing the wikipedia article (especially the picture), I sure hope that the general Cheesesteak looks better than that... :crazy: :P

That looked COMPLETELY different from what I was imagining. :shocked: I was thinking more along the lines of a barrbacue-ribbed sandwich. :crazy:

Are you trying to tell me that Pennsylvania is the home of the Amish? The Amish are in Allentown? Even in Philadelphia?

Pennsylvania Dutch country is an Amish haven. Whether or not they visit Allentown or Philly is beyond me, as I've never been to either city. I also just thought it would be fun to get a Weird Al reference in.

If you don't mind me asking, why are you so excited about visiting Allentown? I mean, yes it was in a Billy Joel song, but he didn't exactly make it sound like a great place to be, did he?

The Philly obsession is interesting too. As far as I know, the only things they have are good sammiches and, well, this thing:

Obsession? I wouldn't exactly call it an obsession if I were you. If it was "obsession", I would be feeling certain emotions that I don't want to feel. Let's just say, I have an affinity for Philadelphia. After all, who doesn't want to take a strong liking to a city whose name literally means "Brotherly Love"?
