Shawna
This may not be much help, but with the Olympics and all maybe it's seen a resurgence somewhere... the theme for "Young and The Restless" was also dubbed "Nadia's Theme" in 1976 after she became the first "perfect" gymnast... and I know it was on an album somewhere as "Nadia's Theme," because I remember buying the vinyl version of it. So that might be a place to check for that one, anyway.

Farin
have you already looked into allmusic.com? there are various tv theme compilations in which you might find most of those eg. TV Hero's has Doug's Main theme The Persuaders! & Other Top Seventies TV Themes has "Red Alert (Theme from General Hospital)"
Viaene
This came to my mind: 'Peter Gunn Theme' and 'Theme to Rawhide' are on the album of "The Blues Brothers: Music from the Soundtrack"
Farin
yeah, the Blues Brothers' versions, but if she wants to have the original ones...
Viaene
but I personally thing the Blues Brother versions are better but the originals: Peter Gunn Theme is written by Macini (Music from Peter Gunn) Rawhide is written by Ned Washington and Dimitri Tiomkin (but I don't find an album)

bazooka
It is very likely most of your wish list themes aren't on any "albums" at all.
