The marrow is a fine vegetable in its own right, though it can hardly compete with the mighty aubergine in form and flavour. Your admission of marrow-love blows my Freudian theory on your dislike of the aubergine right out of the water.

It's not what I have back in ye olde Indya, but I just discovered Ossobuco My wife serves a similar dish when her brother sometimes eats with us. It is his favorite entree. The beef and large bone are thicker than the ossobuco appears; here about an inch and a half. Through preparation techniques, seasoning and cooking, the marrow is rendered to a gelatin inside the bone cup and eaten as a kind of dessert to the tasty beef around it. It is amazingly smooth, good and no doubt filled with vitamins and minerals. When she gets home, I ll have to ask her what the dish is called. You'd love it. I guess you eat meat, eh DD? Or is marrow considered a different creature by vegetarians?

When we were kids my mother tried to make me eat some as I was a very skinny girl... she had to give up, of course... my brother loved it... Eggplants are amazing. I make a mean eggplant Parmesan. Now, that' s really good...
