Sweetbreads are the thymus and pancreas glands of animals. There are two kinds of sweetbreads:

(1) stomach sweetbreads (also known as heart or belly sweetbreads), which are an animal's pancreas.

(2) neck (throat or gullet) sweetbreads, an animal's thymus gland.

I thought that sweetbreads included brains as well? Calf brains are an old timey kind of thing, but my grandma used to eat fried calf brain sammiches. Not me. :P

I'm surprised no comment on Rocky Mountain Oysters .... y'all know they ain't any type of fishy thing, right? They are testicles. Fried up, they aren't bad a-tall. ;)
