_Laurie_ Posted February 4, 2012 Report Share Posted February 4, 2012 Crockpot Taco Dip......Soooooo Simple! 1 teaspoon vegetable oil 1 lb ground chuck 1 (1 ¼ ounce) package taco seasoning mix (I use Old El paso) 1 (10 ounce) jar medium salsa (I use Chi-Chi's brand) 1 lb Velveeta cheese , cubed 1 tablespoon sour cream ¼ cup red onion , chopped 1 garlic clove , minced Directions: 1In skillet, brown ground chuck in oil and chop finely with a spatula. Add chopped onion and garlic and saute' just long enough to sweat but not brown. Drain.2Put meat mixture in crock pot and add all other ingredients. Stir and cover. Heat on "low" for 2-3 hours, stirring after the first hour.3Garnish with finely chopped green onion stems, if desired. Don't forget to mix up some margaritas to drink with this! _Laurie_ Posted February 4, 2012 Report Share Posted February 4, 2012 Friday's Spinach Artichoke Dip: ½ cup sour cream ½ cup mayonnaise ½ cup parmesan cheese (grated) ½ cup mozzarella cheese (cubed) 1 -2 teaspoon minced garlic 1 (10 ounce) package frozen spinach , thawed and squeezed of it's juices 1 (14 ounce) can artichoke hearts , chopped Directions: 1Combine all ingredients.2Place in shallow casserole dish.3You can either bake the dip for about 15-20 minutes at 325 but it can also be heated in the microwave for a few minutes. Shawna Posted November 11, 2012 Report Share Posted November 11, 2012 wow - if my sister hadn't mentioned T-day on her FB this morning, I would have forgotten all about this! That's my memory. Hope this isn't too late, Laurie. It's AWESOME. 2 eggs, beaten 1 1/2 C sugar 1 C pumpkin 1/2 C oil 1/4 C water 1/4 tsp baking powder 1 tsp. baking soda 1/2 tsp. cloves 1/2 tsp. cinnamon 1 2/3 C flour 3/4 tsp. salt Combine eggs and sugar. Mix well with electric beater. Add pumpkin, oil and water. Blend thoroughly. Sift dry ingredients together. Add to first mixture. Mix thoroughly. Pour into soup cans (this is how old this recipe is! I use loaf pans, duh) filling about half full. Bake in 350 degree oven for about 1 hour. Also: I typically toss in about 1 or 2 extra tablespoons of pumpkin just to give it that extra heaviness and moistness. This is the BEST pumpkin bread. Ever. So glad I posted this here.
