  1. Are you sure Pat's isn't one of the best makers of cheesesteaks? I've read they originally made the Philly Steak, back in 1930. That was so long ago, even my grandparents weren't born then. Have you heard of the company known as, "A Taste Of Philadelphia"? I wonder if they've got cheesesteaks?

  2. Annabelle....The amount of cheese depends upon your taste...however, one layer of either American or provolone covering the entire steak is the norm. Either that or a generous shmear of Cheese-Whiz. The cheese is added just as the steak if finishing frying so that it melts just a bit.

    Onion too is of course depending upon personal tastes. I love the Spanish onion cooked til carmelization. Many people say "hold the onion". Some prefer raw onion.

    As for the recipes you mention, I'd have to see them to know if they refer to the same thing.

    The most common seasonings and toppings for Philly Cheese Steaks are:

    Salt and pepper

    *Onions, mushrooms, hot cherry peppers and cheese.

    Ketchup or sometimes steak sauce (rarely).

    A side of french fries is standard practice.

    Then there's the Philly steak sandwich created by yours truly at pat's King Of Steaks in the early 60's. It's the Steak-Roll. You take a plain Philly steak sandwich (no toppings) and add a vertically sliced egg roll as your topping. Season with salt, black pepper and hot pepper to taste.

    Finally, a good Philly Cheese Steak in Allentown?

    Sorry Honey, but no. I've never found one outside of South Philly...not even North, Northeast or West Philly.

    And BTW, neither Pat's nor Geno's make the best Philly Cheese Steaks. There are several shops that are far superior. I recommend that you try Jim's near 6th And South Sts.

    *To order a Philly Cheese Steak with mushrooms, onions and hot peppers you ask for a "Mushroom Cheese Steak wit and wit". The first wit is onions, the second is hot peppers. One wit will always mean onions. If you want neither just do not include a wit. The person taking the order will probably ask, "wit or witout?"

    What I meant to say was, isn't a Philly Steak like a Cheesesteak, except without cheese?

  3. I just looked at the recipe for the Philly Cheesesteak, from Pat's King Of Steaks, and I'd like to have something explained.

    1. If you make a cheesesteak with American or Provolone cheese slices, how many slices do you put on?

    2. One of the ingredients listed is 1 large Spanish Onion. Is the onion a requirement? Or is it actually an optional topping?

    3. Would the recipe for a Philly Steak be the same as the one for a Philly Cheesesteak?

    4. For the recipes with the cheese slices, do you put them on while the steak is cooking? Or do you put them on when you put the steak into the roll?

    5. What are the most common seasonings and toppings for Philly Steaks and Cheesesteaks?

    6. Would I be able to find freshly made Philly Steaks and Cheesesteaks in Allentown? Or would I have to take a trip to Philadelphia?

    To answer your question, and I'm being very sincere, most anyone could like bells, whether it be at Christmas, or Easter, or any time of the year. Handbells and Handchimes come together to bring us melodies of happiness and joy, and to ring out the beautiful tones of peace and harmony all year long.

  5. Babyteen, is the interlude keyboard/piano??? On the album it list "Caribou Chaser (Jazzy Jam)"....I don't know if this is a song...or an interlude, I only heard a sample of it....

    I'm not sure. All I know is, my mother has a cassette tape copy of the album, "That's The Way Of The World". And, the song is played partially at the end of "Happy Feelin'", then it segways into "All About Love". Then, after "All About Love" ends, the interlude comes back again, this time in its entirety. I believe it's played mostly on what sounds like an organ.

    Why sure, I'd make a good living as a sound designer. After all, that is actually what this project is leaning toward. When I bring these recordings home from Pennsylvania, I'm

    going to turn them into a virtual instrument. To give you a better explanation, a virtual instrument is made by taking live samples of an actual player playing an instrument, whether it be a handbell, a handchime, a vibraphone, a trumpet, a flute, or any other musical instrument. It is usually created via AIFF or WAV files on a computer with a sampler software like MACH5, Gigastudio, Halion, Kompakt, Reason, or Kontakt. A virtual instrument can then be played from a digital piano or a music keyboard, if you happen to be familiar with those.

  8. Actually, I was thinking of the wrong one the first time I posted the question. I'm not sure of the title of this song. All I know is, it's by Earth Wind and Fire, it's from their album, "That's The Way Of The World", and it's an instrumental interlude that comes between the songs "Happy Feelin'" and "All About Love", then it comes again at the end of "All About Love", and ends the first side of the cassette. What's the name of that little interlude?

    To be 100% honest with you, I don't exactly know the title of the movie. But I do know that it came out some time between 2003 and 2005, and the song is featured in part of the beginning of the movie where there's spoken dialogue between the two main characters, which are two lovers. The song is then featured again at the end, as the credits are rolling. I know my Grandmother was watching this movie, because it actually came on when she was living near Valley River Center in Eugene, Oregon. She now lives in Cottage Grove. And like I said, the song is instrumental, with a sort of techno beat played on a Roland CR78 Drum Machine. I know I heard it on the smooth jazz station that we used to have here in Eugene, 95.3 KUJZ. However, that particular station isn't here any longer, as it's been taken over, to my dismay, by a country music station!

  10. There's this smooth jazz instrumental song that I've been looking for, for what seems like a couple of years now. The problem is, I don't know the name of the song, nor do I know the name of the artist. All I know about this song is, it came out some time between the late eighties and about 2000, its drum beat is on a Roland CR78 drum machine, the rhythm is sort of a techno beat, and it was featured in a movie. Does anyone know what I'm talking about? Do you have any suggestions as to what the song might be, and what movie it was featured in?

    Yeah, Philadelphia's the city of Brotherly Love, and on top of that, I have family who lives there! If I lived there, I'd be in Paradise! As for ITunes, I haven't tried it, but I know that it would cost 99 Cents for me to find any song there. However, you might be surprised to know, my music teacher has ITunes on his computer.

  12. I was recently introduced to the music of jazz bass player Stanley Clarke the other day. And I happened to come upon one of his songs, which I really like, but have never heard the whole thing. The song is "The Streets Of Philadelphia", and it's from the album, "I Wanna Play For You", released in 1977. I've been looking for the lyrics, as well as the full length recording of this song. Since I only got to hear part of it, I don't know all of the lyrics. Does anyone have any ideas?
